I used McCormick's Pork Rub on the baby back ribs. For sauce I used Famous Dave's "Sassy" sauce. I started out with a lot of briquettes, so I didn't run into the same problem as the first smoke of not getting the heat up initially. I wanted to cook these puppies in under 5 hours so I kept the heat pretty high throughout. I'm not sure if it was cooking them fast, or the fact that I didn't fiddle with the smoker that much (only opened it twice to flip & sauce), but the ribs this time came out very tender and the meat fell off the bone.
